Pilsen

Inspired by the scent of fresh limes in a Pilsen kitchen, with notes of lime, agave, and bergamot.

Located in the lower west side of Chicago, Pilsen has long embraced newcomers to the city. From the initial wave of Czech immigrants—the neighborhood is named after a Czech city—to Mexican immigrants in the 1960s, Pilsen’s demographic shifts have made it a vibrant cultural melting pot. That is reflected in the mom and pop stores, family restaurants, bakeries, and street murals that proliferate. Today, Pilsen’s blend of tradition, modernity, and diversity make it one of the most unique and lively neighborhoods.
